Passionate about vines and wine, Raphaëlle settled in her native region, Puisaye Forterre.

Located on the borders of Burgundy, halfway between Sancerrois and Chablis. There are not many vines left in the region except for a few acres.

Reviving lost vineyards and replanting the hillsides once cultivated with vines before phylloxera, that is the project.

The vines are worked according to the principles of organic farming. 

The first plantation was carried out at the beginning of April 2020 with 0.75ha of Chardonnay, then a second in 2021 with 1ha of Chardonnay.

At the end of 2019, the project expanded with the takeover of the Ferme de l'Orme du Pont located in Ste Colombe sur Loing, not far from the vineyards. 75 hectares surround these 19th century buildings.

Pinot Noir

This cuvée comes from my parcel « les Hâtes » in the village of Lain in Yonne, Burgundy. I discovered this plot in 2018 completly under the bushes. It has been planted in the early years of the 2000’s but then abandoned from 2006. The parcel is nicely located on a small plateau made of clay and limestone with a south-west exposition.

Handpicked harvest in cases of 20kgs. 50% of destemmed grapes and 50% of whole bunches grapes. Two weeks of skin contact with a light extraction. Aging of 6 months in old oak barrels.

Pinot Noir

Les Robinettes is a great parcel planted in 2006 and 2008 with pinot noir. It is located on a stony hill that gives powerful and elegant red wine. South – south-east exposition.

Handpicked harvest in cases of 20kgs. 70% of whole bunches grapes and 30% of destemmed grapes. 20 days of skin contact. Aging of 10 months in old oak barrels.

Chardonnay

The grapes come from a vineyard selection on a clay-limestone plot. The vines have been planted in 2015 and are in organic farming since 2019.

Handpicked harvest at optimal ripeness in cases of 20kg. Direct press, aged partly in oak barels and partly in stainless tank.

Pinot Noir

- Bourgogne Cotes d’Auxerre -

The grapes come from a vineyard of pinot noir on the appellation « Côtes d’Auxerre ». Vines are cultivated in organic farming since 2019.

Handpicked harvest in cases of 20 kgs. 70% of grapes in whole bunches and 30% of destemmed grapes. 18 days of skin contact with very light extraction. Aging of 6 months in stainless tank.

Sauvignon

- Saint Bris -

The grapes comes from a vineyard located in Saint-Bris le Vineux with soil made of clay and limestone. The vines have been planted in 2011 on a 2ha plot. The organic farming conversion has started in 2019.

The grapes are handpicked at maturity in 20kg cases. Harvest is directly pressed in pneumatic press. The wine has been fermented and aged during 10 month in old oak barrels.

Pinot Noir

- Irancy -

The grapes comes from a vineyard of pinot noir on the great area of Irancy. The wines are settled on a stony plateau and give almost every year very small and concentrate berries.

Handpicked harvest in cases of 20kgs. 35% of destemmed grapes and 65% of whole bunches grapes. 17 days of skin contact with light extraction. Aging in old oak barrels during 10 months.

Aligote

- Bourgogne Aligote -

The grapes come from a vineyard of old vines of Aligoté (more than 60 years) planted on a slightly sloping plateau mostly made of limestone.

Handpicked harvest in cases of 20kg. Direct press, fermentation and aging in oak barrels for 7 months.
